FIG ICE CREAM 無花果雪糕

FIG ICE CREAM
Wheat, gluten, corn, nightshade, soya, dairy, egg & nut free
Fresh figs have a quite short season, are horribly delicate and can go off very quickly – so here is the perfect way to use up the ones that got bruised or are already slightly past their best.

Ingredients -

4–5 fresh figs, depending on size
1–2 tbsp honey, depending on how sweet you like your figs
(you could also use maple syrup or agave syrup)
300ml soy cream

Instructions -
1. Top the figs, cut them up and purée them with the honey (or other sweetener) in a food processor. Stir in the cream and mix well.
2. Sweeten further if necessary.
3. Tip into an ice cream maker and churn freeze or, tip all into a bowl and put in the freezer. Take out and stir vigorously every 15 minutes until it is frozen but not rock hard.
Eat at once or store in the freezer but remember to transfer it from freezer to fridge at least half an hour before you want to eat it.

GRILLED PINEAPPLE WITH SESAME SEEDS

Wheat, gluten, corn, egg & nut free; can be dairy or soya free

If you can grill the pineapple just before you serve it, the contrast between the hot pineapple and cold ice cream is particularly good. It

will still work if the pineapple has cooled to room temperature but do not allow it to sit around for too long or it will taste slightly tired.

2 tbsp raisins

2 tbsp brandy

6 rings of fresh pineapple, trimmed and with the

centres removed

approximately 3 tbsp sesame seeds

6 scoops of whichever ‘ice cream ’ you can eat

seeds from 1/2 a fresh pomegranate or, if you cannot find

any, raspberries or sliced strawberries to decorate

Soak the raisins in the brandy for at least two hours.

Heat the grill. Sprinkle a thick layer of sesame seeds over

one side of the pineapple rings, then grill them for 3–4

minutes or until the sesame seeds are starting to brown.

Turn the pineapple slices and repeat the process.

Transfer the pineapple slices to six dishes then spoon the

raisins and brandy into the holes in the middle of the

pineapple slices.

Cover the raisins with a scoops of ice cream then sprinkle

with the pomegranate seeds and serve immediately.

ICE CREAM RECIPES
Vanilla ice cream
8 cups Darifree (prepared)
2 eggs (beaten)
3 Tablespoons oil
3 Tablespoons vanilla
1 ½ cups sugar (optional)
Heat milk to warm. Add other ingredients, mix well. Put in refrigerator at 30 minutes before making (in an ice cream mixer). You can add fruit, chocolate, or other flavorings before making. It’s a great treat at our house!Copyright, Mary Rohrer, all rights reserved.
Chocolate ice cream
1/2cup cold Darifree
1 envelope unflavored gelatin
1/2cup Darifree, heated to boiling
3cups cold Darifree
1/2cup cocoa powder
1 Tbsp. vanilla (GFCF of course)
1 cup sugar (I actually backed off the sugar a little bit)
Place 1/2 cup cold Darifree and gelatin into the blender, cover and process on low to soften the gelatin. Remove feeder cap and add hot Darifree, process until dissolved. If gelatin granules cling to container, stop blender and use rubber spatula to push them into the mixture. When gelatin is dissolved, add sugar, cocoa powder, and vanilla. Cover and process at low speed until mixed. Pour mixture into cream canister. Add 3 cups cold Darifree and stir. Freeze as directed.
Banana chocolate chip ice cream
2 large ripe bananas
2 cups Darifree, prepared double strength (12 teaspoons Darifree : 2 cups water)
1 cup confectioner's sugar
1 teaspoon cinnamon
2 teaspoons vanilla extract
1/2 cup chocolate chips, chopped finely or grated
In a blender, combine all ingredients except chocolate chips and process until smooth and creamy. Transfer into ice cream maker canister and process according to manufacturer's instructions. At soft serve stage, add chocolate chips and continue processing to desired firmness. *This works well as a filling for ice cream sandwich cookies. Copyright, Diane Hartman, all rights reserved.
Peaches and cream ice cream
1 can peaches with juice
2/3 cup Darifree powder
1/2 cup cold water
1/3 cup oil
1 teaspoon vanilla extract
1/2 cup granulated sugar + 1 cup hot water
In a sauce pan, combine sugar and water. Bring to a boil and cook until dissolved. Cool. Transfer all ingredients into blender container, and process on high speed for one minute. Transfer mixture into the canister of ice cream maker and process according to manufacturer's instructions. If firm ice cream is desired, place ice cream into sealed freezer safe container and freeze for an additional 1-2 hours. Copyright, Diane Hartman, all rights reserved.
Strawberry ice cream
1 cup sugar
2 cups strawberries
3/ 4 cup Darifree with double strength powder (4.5 teaspoons Darifree : 0.75 cup water)
1/ 4 cup canola oil
1/ 2 teaspoon xanthan or guar gum
Place sugar in blender, and process on highest speed for 45 seconds. Add remaining ingredients, and process for an additional 45 seconds, or until well mixed. Transfer to ice cream maker, and proceed using manufacturer’s instructions. Copyright, Diane Hartman, all rights reserved.

8 杯Darifree 土豆奶 (已沖開)
2 粒雞蛋 (打發)
3 湯匙油
3 湯匙天然呍呢拿油
1.5 杯糖 (隨意)
把土豆奶加熱,加入其他材料拌勻。把材料放入冰淇淋製造器,再放入冰箱下層30分鐘。開動製造器前可隨意加入水果、巧克力或其他材料。
巧克力冰淇淋
0.5杯冷Darifree土豆奶 (已沖開)
1 把原味魚膠
0.5杯Darifree土豆奶 (滾熱)
3杯冷Darifree土豆奶 (已沖開)
0.5杯可可粉
1湯匙天然呍呢拿油
1杯糖 (隨意)
把0.5杯冷奶跟魚膠放入攪拌器,慢慢攪拌至軟化。加入熱土豆奶,繼續攪拌至魚膠溶化。間中停止攪動,並以橡皮抹刀清除攪拌器附著的魚膠,至溶液全部溶化。加入糖、可可粉及呍呢拿。慢慢攪拌至完全融合。把溶液加入冰淇淋製造器後,再加入3杯冷土豆奶。跟隨製造器指示繼續進行即可。

2 條熟香蕉
2杯Darifree土豆奶(以12茶匙粉水對2杯水)
1杯糖
1茶匙玉桂
2茶匙天然呍呢拿精華
½杯巧克力碎
把所有材料 (巧克力碎除外) 放入攪拌機攪拌至滑溜。把溶液放入冰淇淋製造器,根據製造器指示繼續進行。溶液變成軟冰淇淋狀時,加入巧克力碎至完成。適合製造冰淇淋三文治曲奇。

1罐香桃連果汁
2/3 杯Darifree土豆粉
0.5杯冷水
1/3 杯油
1 茶匙天然呍呢拿精華
0.5杯糖加1杯熱水
鍋內放糖及水,加熱至水開,煮至糖溶化。放涼。把材料加入攪拌器,高速攪動一分鐘。把溶液放進冰淇淋製造器,根據製造器指示繼續進行。提示:想要硬一點的冰淇淋,可把冰淇淋放冰箱一小時。

3/ 4 杯Darifree土豆奶 (4.5 茶匙粉對0.75杯水)
1/ 4 杯芥花籽油
1/ 2 茶匙黃原膠或瓜爾豆膠
把糖放入攪拌器,高速攪動45秒。加入其餘材料,再開動 45秒至融合。把溶液放進冰淇淋製造器,根據製造器指示繼續進行。
